  • 1/4 cup Cranberry-Pomegranate Relish
  • 2 tablespoons mayonnaise (optional)
  • 1/4 cup fresh spinach leaves
  • 1 small carrot, shredded
  • 4 thick slices of turkey

Toast the bread until golden brown. Spread equal amounts of mayo on 2 of the bread slices. Top with spinach leaves, shredded carrot, turkey, and the relish. Place the remaining bread slices on top.
