tuna and white bean panini

ingredients
  • 2 (7 ounce) packages albacore tuna (in water), drained and gently flaked
  • 1 (15 ounce) can cannellini beans, rinsed, drained, and slightly mashed
  • 1/4 cup finely chopped onion
  • 1/2 tablespoon prepared minced garlic
  • 1/4 cup mayonnaise
  • 8 (1/2 inch thick slices) country Italian or Sourdough bread
  • 3 tablespoons butter, softened
  • 2 medium tomatoes, thinly sliced
  • 1 cup lightly packed salad greens or spinach leaves
  • 1 cup shredded mozzarella cheese

directions

In a medium bowl, stir together the tuna, beans, onion, and garlic. Stir in the mayonnaise. Set aside.

To assemble the sandwiches, spread one side of each bread slice with butter. Spread the plain sides of half of the bread slices with the tuna mixture. Top with tomato slices, greens, and cheese. Place the remaining bread slices on top, butter side up.

Heat a skillet over medium-high. When skillet is very warm, place sandwiches in the skillet (2 at a time, if necessary), cover and cook for 2 minutes. Turn sandwiches over, gently press down with a spatula, and cook for another 1-2 minutes, or until bread is toasted and cheese is melted.
