Place potatoes in a large pot of water and bring to a boil. Cook for 7-10 minutes, until tender but still slightly resistant when pierced with a fork. Drain and let cook slightly. To make the dressing, in a small bowl combine the shallot, garlic, parsley, dill, mustard, lemon juice, and vinegar. Whisk until thoroughly mixed. Slowly pour in the olive oil, whisking constantly until blended. Season with salt and pepper. Pour the dressing over the potatoes and mix gently until evenly coated. Sprinkle with dill and serve. |
