cranberry pecan chicken salad

ingredients
  • 1/3 cup light mayonnaise
  • 1/3 cup plain low-fat yogurt
  • 2 tablespoons red wine vinegar
  • 3 tablespoons finely minced shallot
  • 2 tablespoons minced parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 cups of cubed cooked chicken
  • 1 cup pecans, coarsely chopped
  • 1 cup dried cranberries
  • 1 (8 ounce) can water chestnuts, coarsely chopped

directions

In a small bowl, combine the mayonnaise, yogurt, vinegar, shallot, parsley, salt and pepper. Set aside.

In a medium bowl, combine chicken, pecans, cranberries, and water chestnuts.

Add the mayo mixture to the chicken mixture and stir until thoroughly combined.

Serve immediately or refrigerate for 30 or more minutes.
