asian chicken salad with coconut and raisins

ingredients
  • 2 medium pears, peeled and cubed
  • 2 cups rotisserie chicken
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped green onions
  • 1/2 cup raisins
  • 1/2 cup peanuts or cashews
  • 1/2 cup flaked coconut
  • 1/2 cup Asian Sesame and Ginger Vinaigrette
  • 2 cups of white rice (optional)

directions

Combine all ingredients in a large bowl. Place into individual serving bowls and serve (over the rice, if you wish.)
