- 2 medium pears, peeled and cubed
- 2 cups rotisserie chicken
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup chopped green onions
- 1/2 cup raisins
- 1/2 cup peanuts or cashews
- 1/2 cup flaked coconut
- 1/2 cup Asian Sesame and Ginger Vinaigrette
- 2 cups of white rice (optional)
