salmon with balsamic apple topping

ingredients
  • 4 salmon fillets or steaks (about 1 pound)
  • 2 teaspoons olive oil
  • 2 Granny Smith apples, peeled, cored, and chopped
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons fresh snipped basil, mint, or rosemary

directions

Preheat broiler with rack 4 inches from heat. Place salmon fillets on a baking sheet coated with cooking spray. Broil for 8-9 minutes or until opaque throughout.

Meanwhile, heat oil over medium heat in a nonstick skillet. Add apples and cook, stirring a few times, for about 5 minutes or until soft, but not mushy. Stir in the vinegar and honey, cook for another 1-2 minutes.

Serve the mixture over Salmon and top with herbs of your choice. (I also like to serve this dish with a side of brussel sprouts sautéed in butter.)
