Bring a large pot of water to a boil. Add salt and pasta; cook until al dente, 11-12 minutes. Meanwhile, in a large pan over medium heat, warm the olive oil. Add the onion and sauté for 3-5 minutes. Turn the heat up to high and add the turkey meat; cook until fat renders, about 5 minutes. Drain meat and return to pan. Season with salt and pepper. Add the mushrooms and sauté for about 3-5 more minutes. Add the tomato paste and blend well. Add enchilada sauce and cook for 2-3 minutes. Add the sour cream and stir until warmed through. Season with a little more salt and pepper. Drain the pasta and add it to the meat mixture. Serve hot. |
