turkey meatloaf with mashed potatoes and gravy

ingredients
  • 1 egg
  • 2 tablespoons tomato paste
  • salt and pepper
  • 1 1/4 pounds (1 package) ground turkey meat
  • 1/3 cup plain dried breadcrumbs
  • 1 small yellow onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 3 medium potatoes, peeled and cut into cubes
  • 1 can prepared gravy

directions

Preheat oven to 365 degrees. Lightly oil a 9 x13 baking pan and a 1 quart bowl.

Mix all of the ingredients together (except the potatoes and gravy) in the 1 quart bowl. Place the prepared pan over the bowl and, holding the pan and bowl together, invert and lift off the bowl.

Bake for 45 minutes. If the cooking juices start to burn, add a little water to the pan.

About 20 minutes before the meatloaf is done cooking, make your mashed potatoes and heat up the gravy.

Transfer the meatloaf to a cutting board and cut into wedges. Serve over the mashed potatoes and gravy.
