ingredients
  • 1 (6.4 oz.) box Mexican Style Rice-A-Roni
  • 1 pound boneless, skinless chicken thighs or breasts, cut into chunks
  • 1 (15 oz.) can black beans, rinsed and drained
  • 1 cup salsa
  • 1 (4 oz.) can diced green chilies
  • 3/4 cup shredded pepper jack cheese

directions

Prepare rice according to package directions (25 minutes.)

While rice is cooking, cook chicken in a large nonstick pan until lightly browned and cooked through, about 10 minutes. Stir in beans, salsa, and chilies; cook a few minutes more until hot.

Stir cheese and cooked rice into chicken mixture.
