steak and mango lettuce cups

ingredients
  • 1 bottle (12 oz.) Lawry’s Caribbean Jerk marinade
  • 1 1/2 pounds flank steak or sirloin
  • 6 scallions, chopped
  • 1/4 cup lime juice
  • 1 tablespoon vegetable oil
  • 1/2 tablespoon prepared minced garlic
  • 1 ripe mango, peeled, pitted, and cut into strips
  • 8 leaves of Boston or Butter lettuce, split in half, for a total of 16

Combine steak and a cup of the marinade in a large plastic bag and place in refrigerator overnight.

Preheat a grill to medium-high heat.

Grill steak for 7-9 minutes on both sides then let rest for 10 minutes. Thinly slice against the grain.

While the steak is cooking, in a small bowl combine the scallions, lime juice, oil, garlic, and salt and pepper to taste.

Fill lettuce leaves with steak strips and mango; drizzle with the sauce.
