sausage and bean mash

ingredients
  • 1 pound ground pork
  • 3 tablespoons olive oil
  • 2 tablespoons prepared minced garlic
  • 2 cans (15.5 ounces) white beans (such as butter or cannellini), drained and rinsed
  • 1 can (28 ounce) Italian diced tomatoes, undrained
  • salt and pepper
  • 1/4 cup Parmesan cheese
  • 1/4 cup fresh chopped parsley (optional)

In a large skillet, warm 2 tablespoons of the olive oil over medium heat. Cook ground pork, breaking up the pieces with a wooden spoon and stirring occasionally, for about 5 minutes or until no pink remains. Drain and set aside.

In the same skillet, heat the remaining tablespoon of oil and add the garlic, stir for 1 minute. Add one can of the white beans and mash coarsely. Stir in the other can of white beans, diced tomatoes (with their juices), and the cooked pork; season with salt and pepper. Simmer, partially covered, for about 10 minutes.

Serve into bowls and top with the Parmesan and parsley, if using.
