Warm up a grill over medium heat. Oil the grates. Season the pork chops with salt and pepper. Place on the well-oiled grill and cook for 5-7 minutes per side, until meat is no longer pink in the middle. Meanwhile, stir all of your ingredients together in a medium sized bowl. Serve the mixture over the grilled pork. (I also like to serve this dish with a side of couscous.) Note: if you don’t have a grill, you can also cook these under the broiler. Heat broiler with rack set 4 inches from heat. Season pork with salt and pepper. Place on a rimmed baking sheet with aluminum foil and cooking spray; cook for about 5-6 minutes per side. |
