pork with maple chipotle pears

ingredients
  • 4 pork loin chops (about 1/2 pound each, cut 1 inch thick)
  • 2 ripe pears (one red and one green for color), cored and cut into bite-sized slices
  • 2 tablespoons minced red onion
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons lime juice
  • 2 tablespoons pure maple syrup
  • 1 teaspoon adobo sauce from canned chipotle peppers

Warm up a grill over medium heat. Oil the grates.

Season the pork chops with salt and pepper. Place on the well-oiled grill and cook for 5-7 minutes per side, until meat is no longer pink in the middle.

Meanwhile, stir all of your ingredients together in a medium sized bowl.

Serve the mixture over the grilled pork. (I also like to serve this dish with a side of couscous.)

Note: if you don’t have a grill, you can also cook these under the broiler. Heat broiler with rack set 4 inches from heat. Season pork with salt and pepper. Place on a rimmed baking sheet with aluminum foil and cooking spray; cook for about 5-6 minutes per side.
